Healthy breakfast recipe in a pinch! This paleo breakfast takes only minutes and can be made from just about any leftovers in your fridge.

2 eggs

1/2 C seasoned roasted sweet potatoes

1 C spinach – shredded

1/3 C ground turkey breakfast sausage

1/2 small or 1/4 large avocado


Cook the sweet potatoes, spinach, and sausage until heated through and the spinach is done. Crack the eggs over the top and cover until they reach over-easy to over-hard, whichever you prefer. Serve with the avocado and a little hot sauce.
