Snickerdoodle Chia Pudding

1 can coconut milk https://amzn.to/2W93J0v

topped with grain free granola and blueberries

Sweet Potato Toast breakfast sandwich

2 slices sweet potato toast

1 egg

lettuce

2 tsp almond based cream cheese


Sweet potato toasts

slice 1/4 inch thick

400F for 20 minutes

then store in fridge or freeze.


Raspberry Muffins with swirl

¼ cup coconut flour https://amzn.to/2Dp8MCK

¼ teaspoon baking powder

3 large eggs

2 tbsp maple syrup

3 tbsp coconut oil, melted https://amzn.to/2T4C3I5

2 tbsp almond milk

1 tsp pure vanilla extract

1/2 cup raspberries (fresh or frozen)


1 tsp almond butter in each muffin

Bake at 350F for 15-18 minutes or until golden


Pesto Egg Bowl

3 cups kale

1 tbsp pesto

2 poached eggs

half avocado


To poach egg:

add 1 tbsp vinegar to water and bring to boil

crack egg into water and cook for 7 minutes.
